Lemak Ikan Cili Padi
One of the many dishes I grew up having either for lunch or dinner, prepared by my mum. Just add a side of fried vegetbles, ikan bilis, a bulls eye egg and a must have, sambal belacan.
Ingredients
Lemon Grass
Minced Garlic
Sliced Onions/Shallots
Belacan
Chopped cabbage and Green beans
1 can of coconut milk
2-3 thai pepper or more
Tumeric
Fish of your choice but I use Dover or red snapper.
Method
Saute the Lemon Grass first and then add the garlic and onions. Then add the belacan and continue stirring. Add a cup of water, followed by the coconut milk. Add the tumeric.When it starts to boil, add the cabbage and beans and the peppers. When vegetables are half way soften, add the fish and simmer. Salt to taste.
Serve on Jasmine Rice. You can use this same recipe and substitute the fish with crabs. Photo below.
