Vegetarian Stuffed Capicium (Bell Peppers)

A good friend of mine (and her husband) shared some of  their harvest with us today. Capicium, Basil, Onions, fresh from their garden. With that, I decided to make stuffed peppers for dinner. It is healthy, and easy to prepare. What you need can be easily found in your pantry.

I have to get creative with the stuffing as we usually use ground beef but since my husband is on a no meat and seafood diet for the time being, this is what I came up with. 



Ingredients

5 Capiciums cut in half.
2 large onion- chopped
2 large tomato - chopped
1 1/2 cups of Orzo (cooked in water or chicken broth for 4 mins)
2-3 garlic minced
fresh Basil chopped about 1/2 cup (or more if you prefer)
1 tsp cumin
1 tsp pepper
salt to taste





Mix all the ingredients in a large bowl and let sit for  10 minutes in the fridge.


Optional
I happen to have some tomato sauce left and added 1/4 cup of that to the mixture. You can also add chopped mushrooms to the mix to add more flavour.  Spoon them into the peppers and top with mozzarella cheese - shredded or sliced. I don't measure always but eye ball it.


Stuffed and topped with cheese

 Bake at 350 F for  30 minutes in a preheated oven covered in foil.

You can remove the foil during the final 10 minutes if you prefer it browned at the top.Some would bake this uncovered.

Final Product! Serve Hot.
