Farro Salad - My Way

 Ingredients1/2 up of Farro - cooked for 10-12 minutes - set aside to cool
1/4 Large Red Onion- diced
1 stick of celery- diced
2 persian cucumbers diced
1 cup of cooked corn
lime juice - to taste
2 tbs Apple cider vinegar
1/8 cup olive oil
salt and pepper to taste





Mix all the ingredients together and chill in the fridge. 

Optional

You can also add cherry tomatoes to the salad if you like or even olives. Instead of Apple cider vinegar, balsamic vinegar will also taste good. Enjoy!
